6 Weeks to Summer Bootcamp

Spring is here.. Summer is approaching fast.  

Time to leave the sweaters, turtlenecks, heavy jackets, and wool pants behind.  Are you ready for the sleeveless shirts, two piece swimsuit or even a one piece swimsuit?

How many beach trips and/or weddings are you planning to attend this summer?  Do you have anything you can wear?  That was the string that broke the camel for me.  It was last summer, I could not wear anything in my closet.  I refuse to buy a larger size of clothes. That was the moment, I knew I had to make a change.


You Can Finally Lose Weight and Keep It Off! 


I remembered a coworker had great results with P90X, so I decided to try Beachbody products again. This time I started my journey with P90X3, since it was only 30 minutes and I can do it at home, while the kids ran around playing.  

I started eating clean and the food tasted great! I was increasing my water intake and my energy level was increasing. I began cooking more, rather than eating out all the time (my husband was excited).  I started to slowly see the changes in my body, on the scale and non-scale victories.

Three months later, I was down 14 lbs and 4.1% body fat.  That was huge for me.  The journey was not perfect, but I understand this is a lifestyle change, not a crash diet.

Cherry Blossom Smoothie Bowl



Make this delicious smoothie bowl for a fast, nutritious meal anytime of the day! If you want to turn it back into a shake, just add all the ingredients to the blender instead of reserving them to go on top of the bowl. Add toppings like frozen cherries, sliced strawberries, shredded coconut, and add ice. 

Ingredients:
¼ cup water
½ cup unsweetened almond milk
1 scoop Vanilla Shakeology
½ cup frozen unsweetened black cherries, pitted, divided use
½ tsp matcha powder
3 cups ice
¼ cup strawberries, sliced
1 Tbsp. unsweetened shredded coconut
1 Tbsp. raw pumpkin seeds (pepitas)
Preparation:
1. Place water, almond milk, Shakeology, half of the cherries, matcha, and ice in blender; cover. Blend until smooth.
2. Place smoothie in a medium bowl. Top with remaining cherries, strawberries, coconut, and pumpkin seeds; serve immediately.

Paleo Egg Salad


Paleo Egg Salad
Believe me when I tell you this salad is so good! You have to try it. 
Prep Time:7 minutes
Yield:2

Ingredients:
  • 6 boiled eggs, cooled
  • 1/2 small red capsicum (bell pepper), diced
  • 1 avocado, diced
  • 1 small red onion, thinly sliced
  • 3 tablespoons homemade Paleo mayonnaise
  • 2 tablespoons finely chopped chives



Directions:

  • Chop the boiled eggs then place into a medium sized mixing bowl along with the red capsicum, avocado and red onion.
  • In a small bowl combine the mayonnaise and chives. Add to the salad and combine well.
  • Serve.

Homemade Paleo Mayonnaise
 INGREDIENTS
  1. Add all the ingredients to your glass jar and let them sit for a few seconds, just long enough for the egg to settle comfortably at the bottom of the jar, underneath the oil.
  2. Insert your immersion blender and push it all the way down until it makes contact with the bottom of the jar.
  3. Push the power button and do not move the blender for a full 20 seconds. Almost instantly, you’ll see the magic take place right before your eyes: the oil will start to emulsify and turn into this lusciously creamy and thick concoction, slowly making its way all the way to the top of the jar.
  4. After 20 seconds, the transformation should be pretty much complete, so start moving your blender around and up and down just to make sure that every last bit of oil gets well incorporated.
  5. Store in the refrigerator an airtight container for up to 2 weeks.

Don't you know that summer bodies are made in the winter?  There is approximately 12 weeks until June.  The time when everyone is ready to go to the beach.  The stores are starting to put summer clothes out even though it's 30 degrees outside.  This is the sign that summer is coming and now is the time to start preparing.

Now, is the perfect time to start.  Every time you make a healthy choice you are closer to your summer body.  So, when you are ready to have a dessert, stop and think about that bathing suit you want to wear in June.  Think about it, 12 weeks is not a long time and it takes 21 days to create a new habit, 8 weeks to see change and 12 weeks for others to notice!! So, make the commitment now to start making progress toward June!!  If you wait until May, like I have in the past, it's too late and very frustrating and you will try unhealthy approaches to losing weight. Turkey Chili



When its cold outside, I think of making chili. I bet you do too! In the past I only made chili with ground beef. But, I have been making a chili recipe made with turkey meat and the kids love it when I make this recipe! It's healthy, delicious, and easy to make. What's better than that, right? Jot this recipe down and head to the store. You won't regret. 

Tip: It's always better the 2nd day!!! And you can easily freeze this Chili to keep on hand for a quick, healthy meal.   


Ingredients:


2 tsp extra-virgin organic coconut oil, melted

1 medium onion, chopped
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
2 cloves garlic, finely chopped
1 lb cooked 93% lean ground turkey breast
2 cans (15 oz ea) pinto beans (or kidney beans) drained, rinsed
1 (15 oz) can organic diced tomatoes with basil, garlic and oregano, no salt added
1 cup red wine ( love to use Cabernet Sauvignon)
1 Tbsp. ground chili powder
1/2 tsp sea salt (or Himalayan salt)
8 tsp crumbled goat cheese

Directions:

  1. Heat oil in large saucepan over medium-high heat.
  2. Add onion and bell peppers; cook, stirring occasionally, for 5 or 6 minutes, or until onion is translucent.
  3. Add garlic; cook, stirring frequently, for 1 minute.
  4. Add turkey, beans, tomatoes (with liquid), wine, chili powder, salt, and red pepper.  Bring to a boil.  Reduce heat; gently boil, stirring occasionally, for 20 minutes, or until slightly thickened.
  5. Ready to place into serving bowls.  Top with cheese
  6. Enjoy
